This is a Rachael Ray recipe. I haven't tried it yet, but it looks like an easy side for Southwestern or Middle Eastern dishes.
- 1 1⁄2 lbs baby potatoes, halved, leave 1 1/2 inch potatoes or smaller whole
- 1 1⁄2 tablespoons olive oil
- 1 teaspoon cumin seed
- coarse salt, to taste
- Preheat oven to 400.
- Set potatoes on cookie sheet and drizzle with oil. Toss with cumin seeds and roast 20 min, then broil 5 min to brown cut edges.
- Toss cooked potatoes with salt, and serve.
A simple recipe, but one of my favorite ways of making potatoes.
A very enjoyable side dish with Indian toor dal and Basmati rice topped with yoghurt and a tall glass of juice. The flavours were unforgettable! Thank you for sharing :)
