- 1 cup organic brown rice, cooked, unsalted
- 1 (15 ounce) canorganic coconut milk, well strained
- 1 (15 ounce) canorganic no-sugar-added crushed pineapple, in liquid
- Add all ingredients to a medium sauce pan. Bring to a bowl, then reduce heat to low and simmer until thick;about 30-40 minutes. Stirring frequently to prevent burning. Let cook and transfer to individual containers. Can freeze up to 3 months. Just thaw in microwave for 1 minute.
