  • Blend together first four ingredients.
  • Add the remaining ingredients.
  • Stir, do not beat.
  • Bake at 350°F for approximately 50 minutes in a greased, floured loaf pan.

  2. This recipe has been my family for years as well!! Over time we have made a few changes that I thought I would pass along! Our recipe called for 2 cups of oil which I have changed to 1 cup of oil and 1 cup of applesauce. We have also experimented with various baby foods and my 2 year old daughter LOVES the apple/blueberry. And last but not least, we add 1 tsp ea of almond flavoring, butter flavoring & vanilla!! ITS COMPLETELY YUMMY!
     
  3. The recipe I have also includes a glaze of 1 cup powdered sugar combined with lemon juice. It is to be poured over the cake while it is still hot. Delicious!
     
  4. This tastes like a spicy apple sauce cake. I use a cup of oil (because that's what grandma's recipe asks for...she also uses a 13x9 inch baking pan 350 degrees for 40 minutes to make the slices thinner). This cake is very moist and freezes well. For frosting, mix 3 tablespoons drained and chopped canned plums (or plum baby food), 2 Tbsp. soft butter and a 16 oz. package of confectioner's sugar(and a touch of milk to get the consistancy right). Spread over slightly warm cake (it's a beautiful mauve color).
     
  5. I've been using this recipe for almost ten years. I add raisins to the batter (regular red ones plus golden ones) and sultanas. Be sure to add a bit more oil, as the dried fruit soaks up moisture. I have also had a hard time finding plum baby food. I experimented last year with plum jelly mixed with just a little applesauce, and it was better than with the baby food, which was too much apple sauce, not enough plum. I drizzle caramel ice cream topping over the individual slices.
