- 1 cup oil
- 2 cups sugar
- 3 eggs
- 1 (4 3/4 ounce) jar baby plums
- 1 (4 3/4 ounce) jar baby apricots
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1 cup pecans, chopped
- Mix all but pecans.
- when well mixed fold in pecans.
- and pour into greased and sugared bundt pan.
- Bake at 350 for 1 hour.
I made this cake when my husband and I told our parents that we were having a boy (I frosted it with blue icing.)
I used to make this (I got it from a magazine) with banana baby food and this recipe is delicious. I make it in a bread pan and sprinkle with confectioner's sugar when cold.
Very good. I made a layer cake and iced it with an almond icing.
