Baby E's Peanut Butter Bonbons

"I got this recipe out of our local newspaper. I did a little bit of tweaking to suit my tastes (I prefer something a little less sweet). These little bites are quick and easy to make, and would make great gifts for the holidays. You can adjust the sugar content and type of chocolate chips you use, to suit your own sweetness preference"

  • 1 cup natural-style no-sugar-added peanut butter
  • 34 cup powdered sugar
  • 2 tablespoons softened butter
  • 1 1 cup raisins (any dried fruit) or 1 cup dates (any dried fruit)
  • 1 cup chopped nuts
  • 2 cups dark chocolate chips (60% cacao)

  • Mix together peanut butter, powdered sugar, butter, fruit and nuts.
  • Shape into small balls, roughly the size of a teaspoon.
  • Melt chocolate in microwave, about two minutes. Stir to melt remaining chips. Microwave in thirty second increments, as necessary to melt all chips, being careful not to scorch chocolate.
  • Dip peanut butter balls in melted chocolate, covering completely. Lift out with a fork, and place on a wax paper lined baking sheet.
  • Refrigerate for at least fifteen minutes, or until chocolate sets.
