Baby Cupcakes With Sultanas

"This is great for toddler parties - the cakes are tiny so children don't get bored with eating them [like they seem to with normal size cupcakes]. This was originally from Good Taste magazine in Australia - they used choc chips but I prefer sultanas."

  • Preheat oven to 180°C
  • Line 36 x 30ml (1 1/2-tbs) capacity mini muffin pans with paper cases.
  • Combine the flour, sugar and sultanas in large bowl.
  • Combine the milk, butter, egg and vanilla essence in a large jug.
  • Add the egg mixture to the flour mixture and stir until just combined.
  • Spoon the mixture among the prepared muffin pans. Bake in oven for 12-15 minutes or until a skewer inserted into the centres comes out clean.
  • Set aside for 2-3 minutes, then turn onto a wire rack.
  • I prefer them 'naked' but if you want to ice them set aside for 1 hour to cool completely first.
