This is a simple braised vegetable dish that I adapted from one found on another site.

Very flavourful! Great way to use bok choy. Next time, I'd probably simmer for no more than 15 minutes so the bok choy maintains a bit of the crunch.

  1. In a hot skillet, heat oil and bacon grease. Saute garlic until aromatic, about 2 minutes. Add bok choy, mushrooms, salt, and pepper and cook for 3 minutes. Add stock and soy sauce, simmer for 20-30 minutes. Stir in chives. Serve hot.
