Baby Blue Spinach Salad

Blueberries, blue cheese and baby spinach w/ a light dressing.

Ingredients:

Servings: 6

• 8 ounces baby spinach
• 1 cup blueberries , washed
• ½ cup sliced vidalia onion , use any sweet onion
• ½ cup sliced almonds
• 4 ounces crumbled gorgonzola , use favorite blue cheese
• 3 tablespoons cider vinegar
• ¼ cup extra virgin olive oil
• 2 teaspoons Dijon mustard
• 1 -2 teaspoon sugar
• 1 teaspoon tarragon
• ¼ teaspoon salt
• fresh ground black pepper

Directions:

1. In a large bowl, toss together the baby spinach, blueberries, onions, almonds, and crumbled gorgonzola cheese.
2. In a small bowl, whisk together the vinegar, oil, dijon, sugar, tarragon and salt.
3. Pour dressing over salad and toss to coat.
4. Sprinkle with freshly ground black pepper.
5. Serve.

GREAT salad, used fresh spinach out of the garden, It was an awesome, very refreshing salad

This is a wonderful salad! It is similar to one I often have for lunch from the Post Oak Grill in Houston, but even tastier. The only thing I will change next time is to leave out the onion - just a personal preference. Made for PAC Spring 2010.
