Using up some more of bacon that I bought. These BLT's are really delicious with arugula on them instead of lettuce! So really, I guess they are BAT's! (Somehow BAT's does not sound as appetizing! Hee Hee) Enjoy!
- Cook the bacon in a skillet until crisp then let drain and cool on a paper towel.
- Slice your english muffins in half and then toast or warm them to your liking.
- Spread mayonnaise onto both slices then add tomato slices, bacon, and then arugula.
I used a leftover bialy instead of an English muffin and homemade mayonnaise. I love BLTs and variations of them. Maybe you could call this a TAB. ;) Thanks for posting!
