ingredients
- 4 cups unbleached flour
- 2 teaspoons sea salt
- 4 teaspoons baking soda
- 2 cups sweet creamy butter, softened
- 4 cups unbleached cane sugar
- 2 teaspoons pure vanilla extract
- 4 cups mashed bananas
- 8 large eggs, beaten
- 2 cups pecan pieces
directions
- Heat oven to 350.
- Spray six 8 inch loaf pans with cooking spray containing flour.
- Sift flour, salt, and baking soda in a large bowl.
- In a separate bowl, mix together the butter and sugar until smooth, mix in vanilla extract until blended.
- Stir in bananas, eggs, and pecan pieces.
- Mix liquid and dry mixtures together.
- Divide batter into six loaf pans.
- Bake for 60 - 70 minutes or until a knife inserted into center comes out clean.
- Serve warm.

This made for a super moist banana bread. I made as written, with the exception of adding about a cup of semi-sweet chocolate chips. The bread didn't rise much, but it did have a very nice flavor. I took two loaves to work and they quickly disappeared. I gave the third loaf to my in-laws who also enjoyed it very much. Made for Jan. 2011 Bargain Basement Tag.
