My favorite banana bread, I like to use unbleached flour and sugar but you could use which ever you choose. Also, this recipe makes about six 8 inch loaves...several people want one when I make them so have to make enough for everyone.
Directions:

Heat oven to 350.

Spray six 8 inch loaf pans with cooking spray containing flour.

Sift flour, salt, and baking soda in a large bowl.

In a separate bowl, mix together the butter and sugar until smooth, mix in vanilla extract until blended.

Stir in bananas, eggs, and pecan pieces.

Mix liquid and dry mixtures together.

Divide batter into six loaf pans.

Bake for 60 - 70 minutes or until a knife inserted into center comes out clean.

Serve warm.

This made for a super moist banana bread. I made as written, with the exception of adding about a cup of semi-sweet chocolate chips. The bread didn't rise much, but it did have a very nice flavor. I took two loaves to work and they quickly disappeared. I gave the third loaf to my in-laws who also enjoyed it very much. Made for Jan. 2011 Bargain Basement Tag.
