  • Saute onion and some garlic powder in olive oil 30 minutes or until very tender (low heat; don't brown onions).
  • Add butter and flour to make roux; cook it for about 5 minutes.
  • Add tomato paste and cook another minute or so.
  • Add vegetable stock; mix well to thicken.
  • Add a few shots of Worcestershire sauce to get it a little brown.
  • Use soy sauce as salt (to taste) to make it a bit darker.
  • Add pepper to taste.
