Awesome Meatloaf

"Growing up my husband and his siblings didn't like tomato sauce so my mother-in-law had to modify her meatloaf recipe to get them to eat it...it's actually pretty darn good!"

  • Mix all ingredients together accept the cream of mushroom soup.
  • Grease a meatloaf pan or casserole dish and spread the meatloaf mixture into the pan.
  • Spread the undiluted cream of mushroom soup over the meatloaf mixture.
  • Bake uncovered in a 350 degree oven for 1 1/2 hours.

  1. Absolutely Delicious! This is the only way I make meatloaf anymore. I have made a couple of changes though. I use low sodium cream of mushroom & mix half of it into the meat mixture. I also use instant brown rice instead of bread crumbs & leave out the water.
     
  2. I followed this recipe to the "T", crushing croutons for bread crumbs. As other people mentioned it is a bit tender. Chilling it will give it a firmer texture. After all isn't MEATLOAF for sandwiches? (it was great hot too)..<br/>This is definitely a keeper. Thanks Carrie!
     
  3. Same boat here, my son hated meat loaf until I made it this way! I prefer this recipe over my mom's ketchup based loag...... sorry Mom!

  5. A good, basic meatloaf. Moist texture, crumbled just a little when I sliced it. I usually prefer a slightly sweetened tomatoey topping, but the mushroom soup on top was quite good. Thanks for the post.

I live in Bristol, CT. I am a stay at home MOM with 4 children. Hubby works hard and the kids play hard and the best time of day for us is dinner. I love to cook so this is my chance to do something I enjoy everyday and because I am doing it for the ones I love it makes it even better. My family is very patient and will try anything...I love them for that because I love to come up with new recipe creations and as you all know they don't always come out so good...lololol!
