Awesome Gluten Free Chocolate Chip Cookies

"This is a favorite recipe I adapted to be gluten free for my husband. It's soft and chewy and doesn't dry out quickly like most gluten free cookies do. It originally came from "Best of Country Cookies" by Taste of Home."

  • In mixing bowl, cream butter, sugars and pudding mix.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in vanilla.
  • Gradually add flour mix, xanthan gum, and baking soda.
  • Stir in chocoate chips.
  • Drop by rounded teaspoonfuls 2 inches apart onto parchment paper lined cookie sheet.
  • Bake at 350 for 8-10 minutes.
  • Remove to wire racks and let cool.
  • Enjoy!

  3. These cookies takes so GOOD. My husband nor my children believed me when I told them that they are gluten free.
     
  4. These cookies are terrific! My teenage son said they were the best cookies he has ever had - gluten free or not. Just as the recipe says, they do not dry out as other gf cookies often do, but stay soft and moist. Truly a perfect cookie for my two gluten intolerant sons.

Hi! My name is Lynn. Dh and I were married in June 1992. We are grain and livestock farmers. We have 2 children. I have been a stay-at-home mom since 1997 and love it. I teach Sunday School and lead a mother's bible study at our church. I love recipes. I am always asking for someone's recipe. I find it a huge compliment when people ask for my recipes. We found out last summer that dh is allergic to wheat. Gluten free cooking can be challenging but I am getting used to adjusting my recipes. Besides cooking my other hobbies include flower gardening, bird watching, photography and scrapbooking.
