Awesome Apple and Cinnamon Pancakes

ingredients
- 354.88 ml flour
- 14.79 ml baking powder
- 0.25 ml salt (about 1/8 tsp)
- 2.46 ml cinnamon (can use more)
- 1 large eggs or 1 large extra large egg, beaten
- 236.59 ml apple juice
- 59.14 ml applesauce (can use a bit more)
- 44.37 ml liquid honey
- 29.58 ml melted butter
- oil (for frying)
directions
- In a bowl, mix first 4 ingredients.
- In another bowl, whisk together the remaining ingredients, except the oil.
- Stir the egg/apple mixture into the dry ingredients; mix well, until smooth.
- Warm a skillet.
- When skillet is hot, add approx 1/4 cup batter.
- Cook until pancake until golden (approx 3 minutes on each side).

I gave these 4 stars. Oh these are great served with Pure Maple Syrup. Eating them without I think the pancakes needed more cinnamon as there was a faint taste of cinnamon but when I drizzled on the Pure Maple Syrup the cinnamon stood out. I mixed my batter with my hand mixer. The batter seemed thin when being beat and I was worried about then being to thin but when I put them on my Hamilton Beach griddle they came of perfect. Not to thick and not thin just the way a pancake so be. I made 3 batches of pancake batter then made my pancakes and have plenty in my freezer to last for a while. Thanks for posting a yummy recipe. My son is picky about pancakes, but I get sick of plain old white flavorless pancakes. My changes were to replace the butter with 2 more T. applesauce; also added 2 T. milk so the batter wasn't quite so thick (my kids don't like thick pancakes); and I doubled the cinnamon because I love cinnamon. I was still worried my son might not like them, but he loves apple jacks cereal, so I told him they were "Apple Jacks Pancakes." He loved them! The kids had theirs with syrup, I simply topped mine with addition unsweetened applesauce and a little cinnamon sugar. Wonderful recipe!!!
