Quick easy & attractive appetizer
- Wrap a slice of salmon around each quarter of avocado.
- Secure with picks.
- Garnish with lime& onion.
- The lime helps prvent the avocado from discoloring.
Nice to see someone else who appreciates the salmon/avocado combo. If you spread cream cheese (mixed with finely chopped red onion and/or capers) on the lox first, you don't need the toothpicks and it makes these roll-ups even more rich and flavorful. I like to sprinkle them with lemon juice.
