Avocado Tomato and Olive Salsa

ingredients

  • 2 avocados (ripe but still firm, diced)
  • 2 garlic cloves (minced)
  • 12 teaspoon cumin
  • 2 tablespoons fresh cilantro (chopped)
  • 2 cups grape tomatoes (quartered)
  • 12 medium red onion (chopped, may substitute green onion...very tasty as well)
  • 1 cup black olives (sliced, or green olives...your preference)
  • 12 cup feta cheese (crumbled)
  • 1 lime (juice of)
  • 14 - 12 cup Italian dressing (for some reason Wishbone Robust seems to work particularly well....but your favorite will certainly )

  • Toss everything together gently, chill for a couple of hours and serve with tortilla chips!

  1. Yum! I could just eat this plain, but I ended up putting it in a flax pita sandwich with some turkey for some extra protein. I also added corn. This is going in my favorites folder :)

  4. Oh my! Was this ever good! We devoured the dish along with steak. The flavours are fresh and the colours beautiful together. I squeezed some lemon over the avocados after dicing and it seemed to do the trick. They were still green after 3 hours in the fridge. I only omitted the olives (we are not olive fans). We will definitely make this again. Made for 1-2-3 hits
     
  5. I was skeptical of the italian dressing with this salsa but was pleasantly surprised! All the flavors worked together very well. I served this as an appetizer for a dinner party...everyone scooped this up and asked for the recipe.

I grew up in rural east Texas and Louisiana before being transplanted to the beautiful state of Kentucky at the age of 17....so for the most part, my 'hard drive' is programmed for rich, southern style food. Recipes for things like mashed potatoes, cream gravy, pot roast, chicken fried steak and chili are burned in to my DNA!! ?I will never deny my love for rich, southern foods and I'm not a fan of stripping away all the fat and flavor in order to lighten up my favorite southern staples, however (fortunately) my culinary horizons expand beyond my roots and I love finding new foods and new ways of cooking that are just as delicious and in many cases much healthier. ?I do receive an incredible amount of joy from feeding others....a trait I definately attribute to my southern roots.
