A breakfast sandwich with Avocado Serrano Ham and White Cheddar Cheese. The egg and mayo are infused with fresh herbs and served with fresh fruit

  1. In a bowl whisk mayonnaise, fresh herbs, garlic powder, salt and white pepper.
  2. Toast bread, spread herbal mayonnaise, add lettuce, cheese, Maui onion and ham.
  3. In a bowl whisk 1-egg, season with salt and white pepper. In a non-stick skillet melt 1-teaspoon unsalted butter fry eggs one at a time.
  4. Place fried egg on sandwich, sliced tomato, avocado, lettuce and cover sandwich. Slice sandwich in half and place on a serving plate.
  5. Garnish plates with fresh fruit.
