A symphony of flavors! Quickly put together with things on hand, it was just awesome. Your recipe didn't say whether to use the small Haas avocados or the large Florida avocados. I made the avocado filling to go in chicken wraps in tortillas. Absolutely wonderful. Will definitely be making this again and again and again and again - I'm a huge avocado fan.
I usually make guacamole like this (typically without the corn though) so I loved this recipe. Serving it on lettuce was a nice way to turn this into a healthy lunch.
Excellent! This is how I make guacamole but with a little salt, pepper and Tabasco added in. The corn brings a bit of sweetness that pairs very well with the buttery avocado and tart lime juice. I scaled this back to 1 avocado, used basil and oregano in place of cilantro/coriander and bell pepper/capsicum for the jalapeno and the DM and thoroughly enjoyed for a light lunch (one way of getting vegies into her). After scoffing the lot I realized I forgot to put the corn kernels in - will have to remember next time. The DM said she would also like this in a sandwich and I think it would be nice as a dip with fresh veggies or toasted pita bread or crackers. Thank you Sharon123, made for Newest ZAAR Tag.
