Great meatless salad! I loved the dressing.... I did cut the oil down to a bit less than 1/2 cup. I made this as written but skipped the croutons. It's very light and refreshing. Thanx for sharing!

I loved this! I made the dressing by using a flavour shaker and served this fresh and absolutely tasteful salad with lasagna. Thank you so much for sharing. Made for ZWT5

Loved it! Laffer, what a delicious dressing! I especially enjoyed the combination of the lime juice and dry mustard. I changed up the salad a bit using olives rather than kidney beans and regular tomatoes rather than cherry, otherwise made per recipe. Thanks for sharing! Made for Please Review My Recipe, Please see my rating system as I rate tougher than most

Made just as directed and it was very yummy - I used fresh lime juice and loved the tang it gave to the dressing. DS also enjoyed this one, 'Oh, I like kidney beans' he says... since when?!?! LOL! I used some Splenda in place of sugar and sea salt. Served with Cheesy Mini Corn Muffins. Looking forward to making again! Made for ZWT4.

The whole family agreed, keeper salad recipe! I loved the dressing and always love anything with avocado. We did double up on the croutons as I had a bunch of homemade ones made up, and used black beans as opposed to kidney beans (just personal preference). Other than that, followed the recipe exactly and so glad I did. No changes necessary. Thanks Laffer for a yummy summer salad.

This salad turned out quite tasty and we just enjoyed this immensely. I had some pinto beans left over from use yesterday, and avocado so this was truly easy and delicious to put together. If I could of, I would of eaten the whole salad by myself. The only difference was I used some fresh red onions and sliced tomatoes from the garden. I used the lime juice in the dressing and this was so refreshing I think I will use this quite a bit. This will be our "Saturday Salad" this weekend, and looking so forward to making this again. Thank you Laffer! Made for *ZWT4* June 2008.

The dressing makes this salad IMHO. I used fresh lime juice and light olive oil. The salad combination went very well with each other. Made for a nice light lunch. Thanks Laffer.

This was great! I used pinto beans instead of kidney beans and I thought they went well. I really loved the dressing! Thanks!

Delicious salad! I scaled down the ingredients and loved all the flavors! The dressing was just right too. Thank you Laffer!
