5-Ingredient Fix Contest Entry. Easy, tasty and nutritious. My husband and I wanted to find a way to include avocado into our diet. They were delicious. Make sure your prepared potatoes are creamy. Yum!

  1. Preheat oven to 375 degrees.
  2. Clean mushrooms, remove stems and dice.
  3. Brush 1/2 teaspoon mayonnaise on mushroom tops.
  4. Bake mushroom caps face down in shallow greased dish for 15 minutes.
  5. Prepare mashed potatoes using instructions on package.
  6. Peel and mash avocado with 2 teaspoons of mayonnaise and diced stems.
  7. Spoon mashed potatoes into baked mushroom, making hole in center.
  8. Spoon avocado mixture in center of potatoes.
  9. Top mushrooms with shredded cheese.
  10. Bake until bubbly about 10 minutes.
