  • Preheat oven to 375 degrees.
  • Clean mushrooms, remove stems and dice.
  • Brush 1/2 teaspoon mayonnaise on mushroom tops.
  • Bake mushroom caps face down in shallow greased dish for 15 minutes.
  • Prepare mashed potatoes using instructions on package.
  • Peel and mash avocado with 2 teaspoons of mayonnaise and diced stems.
  • Spoon mashed potatoes into baked mushroom, making hole in center.
  • Spoon avocado mixture in center of potatoes.
  • Top mushrooms with shredded cheese.
  • Bake until bubbly about 10 minutes.
