Avocado, Pineapple and Apricot Smoothie

From Essentially Food magazine, a new taste for me but have been making lots of them, love the creaminess.

Directions

  1. Peel and remove stone from avocado.
  2. Cut into chunks and place in blender.
  3. Add pineapple juice and apricot yoghurt.
  4. Blend until smooth.

As a dessert this would be great. :) I made this just for me with only about a cup of juice but using all the yoghurt and 1 small avocado as directed but ended up thinning a bit more with juice to get through my straw LOL A real keeper for us :)

This is very thick and creamy. You`ll need a spoon. I made it for breakfast but this is a great dessert with not to much guilt! :) Great for the skin! Don`t forget to take the peel and rub your rough spot with it! Waste not! your skin will love you for it! I suggest uing very cold juice and a couple of ice cubes. I also doubled the yogurt. Thanks for an interesting Smoothie!
