Avocado Mango Salad

"I bruise easily, and Vitamin A is the key. I try to find interesting ways to serve Avocado because it is so rich in Vitamin A. (I don't worry about the fat in Avocado). This goes well as a side dish for Enchiladas, Quesadillas or any Mexican style foods."

  • Place Lettuce Leaves on 4 salad plates.
  • Top with wedges of avocado.
  • Sprinkle with diced mango.
  • In small bowl, combine cumin, chili powder and garlic powder.
  • Mix with fork until blended.
  • Using fingers pinch spices lightly over avocado and mango to taste.
  • Serve.

  1. Made as shown. I found this recipe does nothing to enhance or improve the natural flavours of the mango or avacado. Will not make again.
     
  2. Very good and so light. I love that it doesn't have dressing but still has a lot of flavor. The only thing I added was some fresh squeezed lime juice once the plates were compiled. It was a nice contrast to the sweetness of the mango.

  4. This was easy to make and totally yummy. I made this as a side salad using more lettuce than one leaf and it was still fabulous. My family thought the mixture of textures and flavors were great. I have already repeated it w/ grilled chicken and some olive oil for a meal salad because the flavor combo is so good.
     
  5. Oh my, the combination of the cool, sweet fruits and hot spicy seasonings made this a fabulous fruit salad. I still have plenty of the spice mixture left over so I'm going try it on other combinations of fruit. A great find!

I have a growing family - 3 horses, 2 dogs (1 being a Great Dane)!, 2 children, 2 cats and a boyfriend. I work quite a bit either at work or on the farm taking care of the "children" - my boyfriend is a stay at home "step-dad" to all and is a former chef so we like to find new ways to cook old foods. This year we will be growing an organic garden and I am ever so excited about it. Organics are a large part of our lives, and they can really put a strain on your pocket book!
