A twist on the classic devilled egg, combining creamy avocado with the yolk for stuffing. You're gonna love it!
- 12 eggs, hard-boiled
- 2 ripe avocados, halved and pitted
- 1 garlic clove, crushed
- Tabasco sauce, to taste
- 1 tablespoon olive oil
- salt and pepper
- Halve the eggs and put the yolks in a mixing bowl.
- Blend the yolks with the avocados, Tabasco, garlic, oil and salt and pepper. Check the seasoning.
- Pipe or spoon mixture into the halved egg whites.
These eggs were delicious. They were like guacamole deviled eggs. The only change I made was to use green chile instead of tabasco sauce. I took these to a Halloween party and put the olive spiders from Halloween Spooky Spider Deviled Eggs on about half the eggs. They were a big hit!
