A refreshing corn salad - great in the summer when the ingredients are fresh!
- 12 ounces corn
- 4 scallions, chopped
- 1⁄3 cup green pepper, chopped
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon black pepper
- 1 1⁄2 tablespoons mayonnaise, such as Helman's
- 1 Hass avocado, cubed
- 2 plum tomatoes, diced
- Combine all ingredients except the avocado and tomato.
- Chill corn mixture for at least an hour or until serving time.
- Just before serving toss in avocado and tomato.
