This is good on crackers or as a spread for party sandwiches.
- 2 large avocados, peeled and seeded
- 2 tablespoons lime juice
- 1 lb butter, softened
- 1⁄2 teaspoon ginger
- 1⁄2 teaspoon seasoning salt
- Combine all ingredients in a food processor or blender until smooth.
- Chill until ready to use.
This is wonderful! I halved (or did about less than half?) the recipe with 2 sticks of butter and 1 gigantor of an avocado. I only added a few shakes of seasoning salt since the butter was salted, but I the ginger and lime juice blend wonderfully. I can't wait to try this with Butter and Jelly Sushi Rolls!
Made this up though a half serve as I only had one avocado which was really needing to be used and did the job magnificanstetly, initially served with some raw vegetables and then tonight gave it to the DM spread on a wholemeal tortilla with salad and JustJanS Sweet Potato and Chickpea Patties (done in a mini version) plus a few on the side topped with Avocado Butter Spread and the DM declared both an absolute winner.
