Avocado and Onion Salad

ingredients
- 2 avocados, peeled, pitted and diced
- 1 sweet onion, thinly sliced and separated into rings
- 1 yellow bell pepper, seeded and cut into thin strips
- 1 large ripe tomatoes, sliced (ideally homegrown or at least an heirloom variety)
- 59.14 ml fresh cilantro, chopped
- 1 lime, juice of
- salt & fresh ground pepper, to taste
- additional cilantro leaf, for garnish
directions
- On individual salad plates, layer tomato, bell pepper, onion rings, and avocado slices.
- Toss together the chopped cilantro, lime juice, salt, and pepper. Drizzle over salads.
- Garnish with a few leaves of cilantro and serve.

I cannot imagine a more unique and a more pleasurable delicious salad then this. I followed this exactly, and didn't change one thing. The lemon/cilantro mix was wonderful! I forgot the yellow pepper in the photo, but I used it as a crunchy, terrific little mild bite. This is just simply a wonderful tasting salad. Wonderful in so many ways. I didn't have homegrown from the garden tomato, but I had one growing in my greenhouse, which I used. So yummy! Made for Everyday is a Tag game May 2009
