Avocado and Onion Salad

"Lovely, simple recipe from www.avocadosalad.com; I haven't tried it yet, but I can just imagine how wonderful it will be next summer with homegrown tomatoes! Mmmmmm.... Also, while the salad says to toss the salad components and dressing, the picture shown was of a beautiful salad constructed of layers. So I'm modifying the instructions to make it as shown. If you're short on time or patience, just gently toss it all together, season with salt & pepper, and dish up. Times are estimates."

  • On individual salad plates, layer tomato, bell pepper, onion rings, and avocado slices.
  • Toss together the chopped cilantro, lime juice, salt, and pepper. Drizzle over salads.
  • Garnish with a few leaves of cilantro and serve.

  2. What a nice refreshing salad, even great in the middle of the winter, can't wait to try it this summer with fresh tomotoes from the garden. Had to settle for a green pepper instead of yellow and my cilantro was limited.
     
  3. I cannot imagine a more unique and a more pleasurable delicious salad then this. I followed this exactly, and didn't change one thing. The lemon/cilantro mix was wonderful! I forgot the yellow pepper in the photo, but I used it as a crunchy, terrific little mild bite. This is just simply a wonderful tasting salad. Wonderful in so many ways. I didn't have homegrown from the garden tomato, but I had one growing in my greenhouse, which I used. So yummy! Made for Everyday is a Tag game May 2009
