Adapted from Taste of Home. This tasty little cake is crammed full of apple goodness! I substitute freshly ground whole grain flour for the all-purpose.

  1. In a mixing bowl, cream shortening and sugar. Add egg and vanilla.
  2. Combine the flour, baking soda, baking powder, salt, cinnamon and nutmeg; add to the creamed mixture.
  3. Stir in apples and nuts if desired.
  4. Spoon into a greased 8-in. square baking pan.
  5. Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean.
  6. Serve warm. Yield: 8 servings.
