I made it for years without the Kirsch... but then broke down and got bottle OMG... WHAT a Difference... get a good quality dry one... like $20+....

Wonnderful recipe, I've made this exact one for years, found it in an old Forum Feasts cookbook from the 60's, which I've lost, so thanks for posting it!! DON'T omit the Kirsch, it's there for the flavor. Enjoy!!!
This is a very good recipe direct from iGourmet.com - and you can also get all the necessary cheeses there too, it's where we need to because the small place that we live doesn't carry all of these! I've never added the Kirsch, and this is very tasty.
I made this but I couldn't find the appropriate cheeses and used emmenthaler, regato and a light smoked cheese. The fondue worked and was smooth and stringy when the bread cubes were dipped into it but I felt it lacked flavour. I also omitted the kirsch which may have had a negative effect.
Yes!!! This is finally the real recipe for fondue! Although Kirsch (the swiss cherry spirit) is said to be optional, I strongly recommend adding it to the fondue: it gives an incredibly good taste to your meal!
