Authentic Anchor Bar Buffalo Chicken Wings

- 36 chicken wings (one wing makes 2 pieces, the "flat" and the "drum")
- 14.79 ml vegetable oil
- 4.92 ml salt
- 236.59 ml all-purpose flour
- 22.18 ml white vinegar
- 1.23 ml cayenne pepper
- 0.61 ml garlic salt
- 1.23 ml Worcestershire sauce
- 4.92 ml Tabasco sauce
- 1.23 ml salt
- 88.74 ml louisiana hot sauce (Frank's is the brand used in Buffalo)
- 88.74 ml unsalted butter or 88.74 ml margarine
- celery rib
- blue cheese dressing
directions
- Preheat oven to 425 degrees F.
- If necessary, cut whole wings into two pieces. In a bowl toss the wings with the oil, and salt. Place into a large plastic shopping bag, and add the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour, and spread out evenly on oiled foil-lined baking pan(s). Do not crowd. Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned.
- While the wings are baking, mix all the ingredients for the sauce in a pan, and over low heat bring to a simmer, stirring occasionally, and then turn off.
- After the wings are cooked, transfer to a large mixing bowl. Pour the sauce over the hot wings and toss with a spoon or spatula to completely coat.
- These are always served with celery sticks and blue cheese dressing on the side.

These were quite delicious and I really liked that I didn't have to fry them to get the crispiness we love. I think I over floured a bit ~ or didn't shake enough off! Overall, a very lightly breaded delicious tasting wing. I used mild wing sauce as I made these for a family luncheon, but everyone enjoyed them completely. Thanks Firems911 for a keeper wing recipe! Made for PAC Spring 2009.

oh YES!!!!! I have been looking for this recipe for years! Thanks for posting! I ate wings at the Anchor Bar many a night while I was college student at SUNY Fredonia and when I was doing research at SUNY Buffalo. I actually had to sign a disclaimer to order and eat their suicidal wings- YUMMMMMMMMMMM!!!!! I now live in the south and believe me when I say, they have NO idea how to cook Buffalo wings down here...NONE! THANK YOU! WOO HOO!!!! :D
