A crumbly, crunchy chocolate cookie made from New Zealand's favourite breakfast cereal.

Directions

  1. Sift together flour, cocoa and baking powder. Add sugar and coconut. Add butter. Mix well.
  2. Add Weetbix. Mix.
  3. Press lightly into a greased 10" Pie plate.
  4. Bake 20 min at 180°C
  5. Slice and Ice as soon as it is removed from the oven. Sprinkle with coconut. Allow to cool completely before serving.

Quick, easy & economical.Great for the kids to make up as we always have all the ingredients at hand. Only trouble is theres never enough even, with a double batch.
