Auntie's Broccoli Cornbread

This recipe was always a favorite from my Aunt, Helen Clarke. A bowl of white beans & a slice of onion is all you need to complete this meal.

Ingredients Nutrition

  • 1 (8 ounce) box Jiffy cornbread mix
  • 1 cup cottage cheese
  • 10 ounces frozen chopped broccoli (thawed & drained)
  • 12 teaspoon salt
  • 3 eggs (beaten)
  • 12 cup butter (melted)
  • 12 cup onion (chopped)
  • 12 cup cheese (shredded) (optional)

Directions

  1. Set out box of frozen broccoli to thaw.
  2. Drain broccoli and remove any excess water with paper towels.
  3. Combine ingredients together adding Jiffy cornbread mix last.
  4. Pour into greased 8 1/2 x 11 pan.
  5. Bake at 400 for 30 minutes or until toothpick inserted into middle comes out clean.
