  • 1 (8 ounce) box Jiffy cornbread mix
  • 1 cup cottage cheese
  • 10 ounces frozen chopped broccoli (thawed & drained)
  • 12 teaspoon salt
  • 3 eggs (beaten)
  • 12 cup butter (melted)
  • 12 cup onion (chopped)
  • 12 cup cheese (shredded) (optional)

  • Set out box of frozen broccoli to thaw.
  • Drain broccoli and remove any excess water with paper towels.
  • Combine ingredients together adding Jiffy cornbread mix last.
  • Pour into greased 8 1/2 x 11 pan.
  • Bake at 400 for 30 minutes or until toothpick inserted into middle comes out clean.
