Aunt Kathi's Fresh Apple Cake

  • Peel apples and cut into small chunks.
  • Pour sugar over them and let stand 10 minutes.
  • Meanwhile, melt margarine.
  • Add to apple mixture with egg.
  • Stir.
  • Add dry ingredients and stir until moistened.
  • Add optional ingredients.
  • Bake in greased and floured 8" square pan.
  • Bake at 350 degrees for 50-55 minutes.
  • Serve warm or cold, alone or topped with whipped cream.

  3. Delicious! I did make a couple of changes (sustituting brown sugar for white, and 1/2 cup wholewheat flour for 1/2 cup white), and I added all the optional items. The mix is very stiff before it goes into the tin, but with all the apple it comes out very moist - almost like a pudding rather than cake. Hot or cold it's awesome. It keeps well in the fridge.
