This is a from scratch recipe using dried beans. I found it handwritten on a very yellowed piece of paper. My husband thinks it's delicious!

Directions

  1. Combine the soaked beans, water, oil, salt and bay leaf. Bring to a boil, then simmer until beans are tender. Add more hot water if necessary.
  2. Drain, reserving 1 cup liquid.
  3. Combine the 1 cup liquid with the remaining ingredients in a small bowl.
  4. Pour over the beans in a casserole dish.
  5. Cover and bake at 300 degrees F for 1 to 1 1/2 hours, adding more liquid if necessary so beans don't dry out.
  6. This gets better with time-leftovers are great!

Very nice but so sweet!! Next time I will leave out the brown sugar and most of the molasses.

Food for the soul from a couple of generations back ... and the leftovers are not simply "great", they're splendid - even cold. ("Simmer 'til tender" doesn't quite work for me - I would have liked an approximate time.) Thank you Aunt Jeannie, wherever you are!
