A great 'candy' not too sweet, healthy almonds and everyone loves them. They stay crunchy for a long time. I make these every Christmas for gifts.
- Toast almonds in a 350F oven for about 15 minutes, watch carefully so they don't burn.
- meanwhile beat 1 egg white until frothy and beat in icing sugar.
- Add hot almonds to this mixture. Turn almonds to coat evenly and pour out onto wax paper to cool. Store in glass jars.
- Recipe can be doubled or tripled.
