This is my great aunt Gunda's rhubarb crunch recipe. It is made with a shortbread base and then the crunch on top. It just melts in your mouth. I put 8 servings but you could cut it into smaller pieces too.

Directions

  1. mix the first 3 ingredients together like a pie crust and pat in pan. Bake in an 8x12 pan for 15 minutes at 350 degrees.
  2. Beat together the eggs, sugar, salt, flour and baking powder. Stir in rhubarb.
  3. Pour over crust and bake for 35 minutes at 350 degrees.
