    Aunt Gunda's Rhubarb Crunch

    This is my great aunt Gunda's rhubarb crunch recipe. It is made with a shortbread base and then the crunch on top. It just melts in your mouth. I put 8 servings but you could cut it into smaller pieces too.

    Ingredients:

    Serves: 8

    Directions:

    1. 1
      mix the first 3 ingredients together like a pie crust and pat in pan. Bake in an 8x12 pan for 15 minutes at 350 degrees.
    2. 2
      Beat together the eggs, sugar, salt, flour and baking powder. Stir in rhubarb.
    3. 3
      Pour over crust and bake for 35 minutes at 350 degrees.
