Recipe by Canadian Country Girl
This is a Mennonite recipe handed down to me from my mom. A rich, delicious cake with fruit, it's quick & easy to prepare. Works best with apricots or plums, but you can really use any fruit you like.
- 2 cups icing sugar
- 1 cup butter, softened
- 1 teaspoon vanilla
- 3 eggs, slightly beaten
- 2 1⁄2 cups flour
- 4 cups apricots, halved
Directions See How It's Made
- Beat together the icing sugar, butter, vanilla, eggs and flour. The batter will be very thick.
- Spread half of the batter in bottom of a greased 9 x 13 pan.
- Lay fruit down on top. Sprinkle with a little sugar.
- Cover with remaining batter. Bake at 350 degrees for 45 minutes or until baked all the way through.
