Audlin Sweet Potato Pie

"I got this recipe from a very dear friend. I will do the original recipe with changes for diabetics. This pie is very good and I really think the ginger makes it taste sooo goood."

  • Peel and cube and boil the sweet potatoes for faster cooking.
  • Bake the pie shells for 6 minutes.
  • Place the cut margarine in the mixing bowl. Add the sweet potatoes and Splenda and spices and blend well. Add eggs one at the time and beat well after addition. Add the milk last.
  • Note: this will be a very thin mixture. Pour into the baked pie shells while still in the oven.
  • Bake at 350F for 40 to 45 minutes. I start to check for doness at about 30 minutes because my oven cooks very fast and they are done at about 33 minutes.
  • Do not over cook or they will be very dry.

  1. Wonderful and so easy! I did reduce the sugar to 1 1/2 cups. My husband said it was so nice to taste the pie, not just the sweet.

I am retired and enjoying just being with my husband of 40 years. I live in West Central Georgia. I love to raise all kind of veggies and roses. My favorite cookbook is Cuisine At Home it is really very guided in telling you exactly how to prepare anything you cook and has pictures step by step. I guess my passions are loveing Dachshunds I've got 3 now and they are very sweet and so loveing. I guess my pet peeve is when I get a meal ready to put on the table my husband says "I'll be there in a minute" and it's more like 30 minutes. I use to reheat the meal but no more and he comes when I put it on the table. For fun I like to take my 3 Doxie's for a long walk.
