I thought this was pretty tasty. The only differences were that I used diced tomatoes and some tomato sauce instead of stewed tomatoes, ground turkey instead of beef and I added kidney beans. I also screwed up and dumped a packet of fajita seasoning into the mix instead of taco seasoning but it was FANTASTIC. I also agree with a previous review that this should be stirred halfway through baking to make sure that the potatoes cook through. But, all in all, everyone in the house loved it. We'll be making it again!

This was easy to throw together however not the most beautiful looking dish. I subbed black beans for the meat to make this a vegetarian dish and omitted the extra cheese to make it healthier. Not a wow but definitely did the job of filling my husband up. Thanks!

Yum! Like eating a baked potato with chili on it. I had to sub the stewed tomatoes with diced tomatoes. Some of the potatoes didn't get totally tender; perhaps it needs to be stirred half-way through? Total comfort food, though. Thanks!!

I made this for lunch today, and boy was it ever good. I did however add a few extra ingredients, and modified the recipe to our liking. I wasn't able to find a 5 ounce box of the potatoes, so I had to use a (4.9 oz.) box instead. I saute'd and added 1/2 cup each, of diced green bell peppers & onions. I added 4 Tablespoons of the taco seasoning, (which should equal a packet of taco seasoning mix that you buy from the stores) plus I added 2 Tablespoons of canned, diced, green chilies, a 1/2 cup of mild salsa, and I used extra sharp white cheddar cheese. I only needed to bake this in the oven for 60 minutes, not including the extra time allowed to melt the cheese. One thing I should add, when greasing the baking dish, be sure to GENEROUSLY grease it, before adding all the ingredients. bmcnichol, "thank you" for posting this recipe; its a keeper!!

This recipe was not bad. The directions were clear. It was easy to put together and the flavor was good just not what I thought it was going to taste like. It sounded sooooo great reading it but the finished dish just wasn't what I was expecting. I cannot think of anything I could do differently without changing the entire recipe to alter it to our tastes so thanks for the post as I got to use up a box of scalloped potatoes that needed to be used.

This was so easy and yummy. I made it exactly as posted except I didn't have a full 2 tablespoons of the taco seasonings. (I thought I had more but I didn't.) As I was putting the cheese on top I thought it was way too much and almost didn't use it all, but I"m glad I did. it was the perfect amount. Thanks so much for posting! Made for PRMR.
