  • In a large skillet, fry bacon until crisp.
  • Remove bacon to drain on a paper towel lined plate.
  • Drain skillet, reserving 1 tablespoon bacon drippings.
  • Saute onion in the bacon drippings, until tender.
  • Layer with potatoes, salt and pepper to taste, peas, 1 cup of cheese, and crumbled bacon.
  • Reduce heat; cover and simmer for 10 minutes or until heated through.
  • Mix together the mayonnaise and milk until smooth texture.
  • Pour mixture over bacon.
  • Sprinkle with remaining cheese.
  • Remove from the heat and let stand for 5 minutes before serving.

  1. Yum! This was a big hit with my family. I subbed in plain yogurt for the mayonaisse, which made it a little more watery but the extra liquid was absorbed during standing time. This definitely makes the cookbook :)

  3. Fabulous! I baked it @350 for about 20 minutes after assembling and replaced half the cheddar with parmesan, but otherwise followed the recipe exactly. Definitely a keeper.
     
  4. WOW! This is excellent. We had it as the main course, so I doubled everything and heated in a casserole dish, but otherwise didn't change anything. It was great! Next time I will be adding extra bacon or maybe diced ham. Thank you.
     
  5. YUMMY! Made this for my Wed. nite dinner with the crew of 9..along side the STICKY PINEAPPLE RIBS! I doubled everything and used Red Potatoes unpealed ( I hate to peal) and the color was great! I used 1 cup mayo and 1/4 cup sour cream to I cup 1% milk. I layered everything in a 9X13 and poured milk miture over the top and put it in the oven 350 for 1/2 hour...(the last 1/2 hour of the rib baking process.) This allowed time for me to sit and enjoy everyone..with a nice glass of wine and it was all ready together. THESE are really yummy and went over very well with everyone! Gave the recipe out and will save it for a yummy potatoes casserole...soon!

  1. I have been making this for several years. I have also used ham instead of bacon and then added some oil to pan.
