  • 34 cup atkins quick quisine low-carbohydrate baking mix
  • 12 cup almond flour
  • 1 cup sugar substitute
  • 1 egg, plus
  • 1 egg yolk
  • 4 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 1 12 pints atkins endulge ice cream, any flavor,slightly softened
  • 34 cup atkins praline, sauce (optional)

directions

  • Heat ovento 425.
  • Whisk togther bake mix, almond flour, and sugar substitute.
  • Add egg, egg yolk, butter and vanilla.
  • With an electric mixer on medium speed, beat ingredients until a dough forms.
  • Pat dough into a pie plate and crimp edges.
  • Chill in freezer 10 inutes.
  • Prick dough all over with a fork.
  • Bake 15-17 minutes, until golden brown.
  • Cool completely.
  • Spoon ice cream into crust; smooth top.
  • Freeze until firm, about 1 hour.
  • Serve with praline sauce.

I am the mother of two beautiful boys. I love to bake and cook which has helped me to become very overweight. I have lost 50 pounds this past year and have been learning to cook "lighter".
