Asparagus Tomato Salad

A modified version of a weight watchers recipe-so good you'll want to make extras for the next day!


  1. Cut up asparagus (you can leave whole for prettier presentation!) Discard woody ends.
  2. Steam or microwave for 2-3 minutes, keeping it crisp!
  3. Rinse in cold water.
  4. Toss with tomatoes.
  5. Dress with vinegar; sprinkle with salt. Enjoy!

WOW!!! THIS WAS SOOOOO GOOD way better then even expected!!!! I did add just a splash of EVOO and a half of a small shallot. Next time I will triple the recipe so that I can have leftovers as just double was not enough (yes, its that good).
