- 453.59 g fresh asparagus, trimmed
- 1 onion, roughly chopped
- 2 garlic cloves, minced
- 22.18 ml olive oil
- 2.46 ml salt
- 396.89 g can chopped tomatoes, in tomato sauce
- 1.23 ml thyme
- 56.69 g mozzarella cheese, thinly sliced
- 14.79 ml parmesan cheese, grated
directions
- Lightly grease a shallow baking dish; Preheat the oven to 350°F.
- Steam asparagus until crisp tender; arrange in baking dish.
- Sauté onion and garlic in olive oil in saucepan until golden.
- Add tomatoes, salt and thyme; simmer uncovered 15 minutes.
- Pour sauce over asparagus.
- Place slices of mozzarella cheese over top.
- Sprinkle with grated Parmesan cheese.
- Bake in preheated oven for 30 minutes.

Easy to make AND tastes good... what a combo! This dish did not turn out perfect for me (not the recipe's fault) because I made the mistake of not trimming ALL of the woody parts of the asparagus stalk. Next time, I will trim better. Hmmm, maybe try sprinkling the top with a little bit of bread crumbs.
