Asparagus and Green Bean Salad with Herb Dijon Dressing

This got rave reviews at a potluck I took it to for Father's Day! My only tweak was adding some honey as it was very tangy and tart. It makes a lot of dressing so adjust accordingly - you may only 1/2 to 1/3 for this recipe. Thanks for a great summer side!

  1. Combine vinegar, shallot, dijon, basil, tarragon and time.
  2. Slowly whisk in oil to form an emulsion.
  3. Season with salt and pepper.
  4. Blanch beans and asparagus in boiling salted water until al dente; shock in ice water and pat dry Combine lettuce, beans, asparagus and tomatoes; toss with dressing.
  5. Arrange in bowl, top with blue cheese, garnish with basil leaves.
