directions

  • Coat bottom of pot with oil or cooking spray. Heat over medium-high flame until hot. Add scallions and saute until tender. Add water and next five ingredients. Bring to a boil. Remove from heat. Add couscous to pan. Cover and let stand 5 minutes or until liquid is absorbed. Fluff with a fork. Serve warm.

  1. I thought the flavors in this were great! I will cut back on the cayenne pepper next time. I used 1/4 teaspoon because we usually love the heat but felt that it overpowered the other lovely flavors in this dish. Can't go wrong with more scallions either!
     
  2. We really enjoyed this couscous I made as per recipe and the zinger was that the DM came back for seconds (a rare event) the flavours were lovely and surprising, thank you brokenburner, made for I Recommend Tag Game and on the recommendation of nemokittyl.

  4. This was very tasty. I made the mistake of adding too much cayenne pepper - HOT! But that was my fault....very nice taste. Thanks.
     
  5. Really good and really easy! I used whole wheat coucous. I agree with Boomette and will add more green onion next time. Thanks for posting the recipe.

I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice. I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that. Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
