- 1 (6 ounce) package rice, pilaf (such as Near East Original Style)
- 1 tablespoon low sodium soy sauce
- 2 teaspoons sesame oil
- 1 tablespoon honey
- 1⁄2 teaspoon minced garlic
- 1 large carrot, shredded (1/2 c.)
- 1⁄2 red bell pepper, diced (1/2 c)
- 2 -3 scallions, sliced (1/4 c.)
- 1⁄4 cup unsalted peanuts, coarsely chopped
- 1 lb large shrimp, peeled and deveined

- Prepare the rice pilaf mix according to package directions.
- Bring a separate large pot of water to a boil for the shrimp.
- In a small bowl, combine the soy sauce, sesame oil, honey, and garlic.
- Put the carrots, bell peppers, scallions, and peanuts in a medium bowl.
- When the rice is cooked, stir it into the vegetables and stir in the soy-sauce mixture.
- Drop the shrimp in the boiling water for 2-3 minutes and cook it until it is pink and opaque.
- Drain it well and add it to the rice mixture.
- Serve the pilaf warm or cold.
