Asian Pears With Vanilla Poached Kumquats

- 1⁄2 vanilla bean, halved lengthwise
- 1⁄2 cup water
- 3 tablespoons fresh lime juice
- 1⁄2 cup sugar
- 1⁄2 lb kumquat, ends trimmed, sliced crosswise 1/3 inch thick, and seeded (20)
- 3 lbs Asian pears, peeled, cored, and sliced lengthwise 1/4 inch thick (4 large)

- Scrape seeds from vanilla bean into water with lime juice in a small heavy saucepan, then add pod, sugar, and a pinch of salt.
- Bring to a boil, stirring until sugar is dissolved, then simmer 3 minutes.
- Add kumquats and simmer, covered, until they just begin to soften, 3 to 4 minutes.
- Put pears in a heatproof bowl. Pour kumquats and syrup over pears and toss gently, then cool.
- Chill fruit, covered, at least 2 hours.

This was a delicious dessert and served over vanilla ice cream, a real crowd pleaser. It was fast to make, you are only simmering the sauce, the pears are uncooked. It looked beautiful with the cream-colored pears dotted with the mellow-orange colored kumquats. I wish I had a picture to upload. But we ate it all!

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
