  • In a large pot heat oil over medium heat.
  • Add the ginger and garlic and cook until tender, 3 to 4 minutes.
  • Combine 1-cup broth with the cornstarch and blend until smooth.
  • Pour the cornstarch mixture into the pot and add the remaining broth, tofu, mushrooms, bamboo shoots, soy sauce, vinegar, sugar and crushed red pepper flakes.
  • Bring the soup to a boil and cook until thickened.
  • Add the frozen vegetables, shrimp and cilantro.
  • Simmer until shrimp is just opaque, about 10 minutes.
  • Stir in the spinach and cook until just wilted.
  • They say if you eat a full pot every 2 to 3 days, that is all you need to drop pounds fast.

  1. This turned out really well! I did tweak it quite a bit. I made it with the intention to freeze it, so I left out the shrimp, tofu, spinach, and the bamboo shoots. I only used two 32 oz chicken broth , which were reduced sodium. I also used one large 52 oz bag of oriental vegetables. It's very flavorful!
     
  2. I am so happy to have easily found this recipe again. It is an absolutely delicious soup that you remember. I can hardly wait to go buy the ingredients. Like someone else said, I wouldn't use over a gallon of broth. I wonder if that is a typo.

I tried a recipe very similar to this one on another recipe site, the only differences being the inclusion of tofu in this one and this one uses about double the broth, otherwise the ingredients are dead on. I loved this soup, and bet it would be good with the tofu too. It was better than any hot and sour soup I'd had in any restaurant. I will have to try it with the tofu in it, but I doubt I will use a gallon of broth, just two 32oz boxes, so it's a little thicker.
     
  4. Oh Yummy! What a way to diet! Made several changes though: dropped the spinach and added fresh snow peas. I added only a few frozen shrimp to the individual portion, else they will be overcooked by the time the whole pot is eaten. And a warning about the frozen oriental veggies: I was amazed, as I generally cook from scratch, about the many varieties! I chose a Japanese one and it included green beans! That doesn't compute with me as Japanese, so be sure to check the ingredient list before you settle on a bag. And I cooked it too long. Crisp veggies actually would be more appropriate. It is a true gift to someone trying to drop a few pounds but not starve.
