Asian Caramelized Chicken

"This chicken in a sticky glaze is a new family favourite but I'd serve it to guests as well. Boneless skinless chicken thighs stay tender and moist and chopped peanuts make an attractive garnish."

  • Heat butter and oil in a large frying pan over medium heat.
  • Open chicken thighs to lie flat in the pan and brown on both sides, in batches if necessary. Set chicken aside.
  • Remove all but 1 Tbsp of fat from the pan, then add remaining ingredients except peanuts and cilantro.
  • Stir and simmer until the sauce becomes thickened and syrupy, about 15 minutes. Taste carefully (it's very hot!) and add more garlic and vinegar if necessary to your taste.
  • Return the chicken to the pan, coat with syrup and cook until chicken is cooked through. If the glaze becomes too thick add a small amount of water and stir. Remove star anise if using.
  • Garnish with chopped peanuts and cilantro if you like and serve.

  3. THIS IS FABULOUS! Like another reviewer...I left the browned chicken in the pan and just poured the sauce ingredients in the pan to thicken for 15 minutes....soooo easy! Served with rice....we loved it! Served with green onions on top instead of the peanuts due to personal preference. Certainly company worthy, QUICK and adictive.
     
  4. Yummy! We are going through a heat wave and didn't really want to cook but this recipe was great. Easy to make and out of the kitchen in less the 30 minutes. The flavour was wonderful, only changed one thing. I didn't have coriander at home so I substituted to spring onions. When the chicken was browning, I mixed the rest of the ingredients in a jug and just poured it on top in step three, which made it even quicker. The flavour was great, served it on steam rice.   5. This is a recipe which cannot be improved upon! (My benchmark!) I had boneless skinless chicken thighs, and I did not change one iota of the recipe, except I used more onion: I chopped up a small sweet onion and I think this was an improvement on the 2 tablespoons given in the recipe. I did not have cilantro and used parsley. On NO account leave out the roasted peanuts!! It gave the dish its final finish and flavour. I roasted peanuts in a small pan, as we only had cocktail peanuts in the house, and then burnt half, so had to pick those out. Fortunately I roasted more than the recipe asked for: I crushed them with a rolling pin, just a little. I also waited for husband's judgment -- he said: 9 out of 10!! I said, sorry, out of five. He said 4 1/2, it almost Paul Bocuse restaurant perfect! So mine was the deciding vote! This is a keeper, and as I have NON-cooks to invite (she is a terrible cook, LOL!), this is the main dish I'll impress them with, recipe doubled. Thank you, Cooking-jo. And remember, I am the low star witch of Zaar. 5 stars do not come easily ... LOL!! ON 26 AUG 2007: Made this again tonight, and want to emphasize: this is one of my favourite chicken recipes!! This time I crushed 2 star anise finely in a mortar and pestle, and added it when the sauce had almost reduced enough. The star anise gave it a delicately exotic overtone. It mustn't be added too early in the cooking, as the flavour will cook away. I do not add cilantro (not fond of it) but want to suggest chopped spring onions (green onions) as a garnish at the end. Fabulous dish!

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown. I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy. I have 2 teenage sons and cooking to suit everyone's taste is always a challenge.
