Try this tasty oriental chicken dish, made with minimum fuss but with maximum taste. Perfect meal for one but easily scaled up for more!
- Preheat oven to 350°F.
- Put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables.
- Bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle.
- Cover with foil half-way through the cooking time.
